This Pear Arugula Salad is a great addition to your holiday table… or any time! Full of antioxidants and vitamins, this simple salad is quick to put together and a crowd favorite.
1-2 pears, chopped
4 cups arugula lettuce, chopped
1/4 red onion, diced
1/4 cup pomegranate seeds (or dried cranberries)
1/4 cup goat cheese, chopped
1 Tbsp dijon mustard
1 Tbsp honey
2 Tbsp balsamic vinegar
2 Tbsp olive oil
pinch each of black pepper, garlic salt, sea salt
Slightly chop the arugula in a large bowl. Throw in the pear, onion, pomegranate and goat cheese (reserve a little goat cheese for garnish). Give the ingredients a good stir. In a small bowl, combine the liquid ingredients and whisk them together. Add a pinch of pepper, garlic salt and sea salt to the dressing mix. Stir in the dressing with the salad mix. Garnish with a little goat cheese on top and serve!
