Vegetarian

  • l eggplant
  • 1 squash
  • 1 zucchini
  • 1/2 red onion
  • 1 clove garlic

Meat

  • 1 lb chicken
  • 1/2 lb shrimp

Tortillas

  • corn (gluten free)
  • whole grain tortillas

Marinade

  • corn (gluten free)
  • soy sauce
  • 1/8 tsp cayenne pepper
  • 1/2 tsp cumin powder
  • 1 tbsp canola oil
  • 1/2 tsp liquid amino acids

Method

I will use meat or vegetables depending on our meat consumption that week.
Step 1: Cut vegetables or meat lengthwise. marinate meat or vegetables for 30 min in bowl or sealed plastic bag.
Step : While above marinating, prep salsa, guacamole and “healthy sour cream”

Salsa

Cut and mix with 1/2 tsp garlic salt and 1/2 lemon squeezed.

  • 1 tomato chopped
  • 1 onion chopped
  • 1 clove garlic, minced
  • 1 jalapeño, minced
  • i small red bell pepper, chopped
  • 1 cucumber, chopped

Healthy Sour Cream

Mix together

  • 1 cup of greek yogurt
  • 1/4 pkg taco seasoning

Guacamole

  • 2 ripe avocados
  • 1/4 cup chopped onion
  • 1/2 tsp garlic salt
  • 1/4 cup chopped tomato

Once desired toppings made, stir fry, broil or briefly grill vegetables or meat. Heat tortillas. Set out toppings. Enjoy!
