Ingredients (Serves 4)

1 tablespoon extra-virgin olive oil
4 cups mixed chopped greens (such as collards, Swiss chard, spinach or kale)
1 teaspoon honey
2 tablespoons balsamic vinegar
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes

Warm the oil in a 10″ non-stick skillet (seasoned iron is our favorite) over medium-high heat. When the oil is hot, add the greens. Cover and cook, stirring occasionally, until the greens wilt, about 3 minutes.

Remove from the heat. Stir in the honey, vinegar, oregano, red pepper flakes, and 1/4 teaspoon of salt. Toss well and serve.
