Debating on whether or not to clean out your pumpkin for its seeds? I know it takes a little work, but it’s totally worth the effort! 

Pumpkin seeds are nutritional powerhouses and are so easy to roast. You can enjoy them on top of salads or toast, make a trail mix of sorts, or eat as a solo snack. They contain magnesium, which more than half of Americans are deficient in, protein and zinc! They also contain powerful antioxidants! Take a break from the candy , and try this easy recipe to satisfy your craving for something salty and sweet!

Salty Sweet Pumpkin Seeds

Preheat your oven to 325.

Ingredients

  • 5 – 2 cups of pumpkin seeds
  • 5 Tablespoons of melted ghee (or Grass-fed butter/coconut oil)
  • 1 – 1.5 Tablespoons of cinnamon
  • 1 – 2 Tablespoons of Stevia (or coconut palm sugar/organic sugar)
  • Few shakes of celtic sea salt (or salt of choice)

Rinse and pat dry the pumpkin seeds. Combine melted ghee and seeds in a bowl. Spread on a baking sheet. In a separate bowl, combine cinnamon and sugar. Sprinkle cinnamon/sugar mixture on top of the ghee covered seeds. Toss the seeds around the pan until evenly coated. Shake a little sea salt over the top. Roast in the oven for about 20 – 25-minutes, or until golden brown, stirring once. Allow to cool. Enjoy.
